Spicy Ginger Chicken
(Serves 2)
Ingredients
Chicken breast: 2 x 120g (females) OR 2 x 220g (males)

Tony Ferguson Fibre
1 Egg, beaten
1 ½ Teaspoon cumin
1 ½ Teaspoon ground coriander/dhania seeds
1 ½ Teaspoons turmeric
½ Teaspoon cayenne powder
½ Teaspoon nutmeg
2 Cloves garlic, crushed
2 Teaspoons ginger paste
Salt to taste
1 Tablespoon olive oil
Method
In a small bowl combine the cumin, coriander/dhania seeds, turmeric, cayenne, nutmeg, garlic and ginger. Divide mix into half.
Rub each chicken breast with half each of the spice ginger mix spreading the mix evenly on both sides of the chicken.
Spread the fibre and a pinch of salt on a plate. Dip the chicken into the egg and then crumb lightly with the fibre.
Heat the oil on medium heat in a fry pan then add the chicken and cook until chicken is golden on both sides.
