Pepper Steak topped with Herb Salad
(Serves 1)
Ingredients
- Beef fillet steak: 120g (females) OR 220g (males), fat trimmed
- 1/8 - ¼ Tablespoon cracked pepper (depending on how peppery you like it)
- Salt to taste
- 1 Tablespoon olive oil
- 1½ Tablespoons basil, finely chopped
- ½ Tablespoon parsley, finely chopped
- ½ Tablespoon oregano or rosemary, finely chopped
- 1 Medium tomato, finely chopped
- ¼ Small red onion, thinly sliced
- 2 Tablespoons lemon juice
Method
- Heat oil in a small fry pan on medium heat. While the oil is heating, rub both sides of the steak with the cracked pepper and salt as desired.
- Place the steak in the pan and cook for 3-5 minutes on each side.
- While the steak is cooking, add the herbs, tomato, onion, lemon juice and a pinch of salt in a bowl and combine.
- Once steak has finished cooking, place on a serving plate and top with the herb salad.
