Pepper Steak topped with Herb Salad

(Serves 1)

Ingredients

  • Beef fillet steak: 120g (females) OR 220g (males), fat trimmed
  • 1/8 - ¼ Tablespoon cracked pepper (depending on how peppery you like it)
  • Salt to taste
  • 1 Tablespoon olive oil
  • 1½ Tablespoons basil, finely chopped
  • ½ Tablespoon parsley, finely chopped
  • ½ Tablespoon oregano or rosemary, finely chopped
  • 1 Medium tomato, finely chopped
  • ¼ Small red onion, thinly sliced
  • 2 Tablespoons lemon juice

Method

  1. Heat oil in a small fry pan on medium heat. While the oil is heating, rub both sides of the steak with the cracked pepper and salt as desired.
  2. Place the steak in the pan and cook for 3-5 minutes on each side.
  3. While the steak is cooking, add the herbs, tomato, onion, lemon juice and a pinch of salt in a bowl and combine.
  4. Once steak has finished cooking, place on a serving plate and top with the herb salad.

Serving Suggestion

This recipe is gluten, dairy and soy free.
