Forest Berry Pudding
(Serves 2)
Ingredients

- French Vanilla flavour

- Wildberry flavour
½ Sachet
Tony Ferguson Diet Jelly
- Raspberry or Strawberry flavour
1 Serve of blueberries
½ Serve of strawberries, finely sliced
Method
In a bowl, make up the jelly using 150-200ml water (dissolve in 50ml hot water first, then top up with the remaining water as cold water).
In another bowl combine the French Vanilla and Wildberry shake sachets. Slowly pour the jelly liquid into the shake powder combining with a whisk.
Obtain 2 small glass bowls or moulds. Line with cling wrap.
Combine the berries in a bowl and place a quarter of the mixed berries into the lined bowls or moulds.
Pour shake jelly mixture over the berries, then place in the fridge to set.
Once set, blend half the remaining berries into a sauce. Remove the puddings from their mould and place on a serving plate. Divide the sauce and remaining berries into 2, then pour one portion of sauce over one pudding topping with one portion of berries. (Save the 2
nd
pudding and remaining berries for your next meal or the next day. Store in the fridge)
Serve immediately after a salad or
vegetable side dish

This recipe serves two, each serve containing 1 shake and half a fruit serve.
