Crumbed Garlic & Herb Chicken

(Serves 2)

Ingredients

  • 2 x 120g Chicken breast fillets (females) OR 2 x 220g (males)
  • 4 Cloves of garlic, crushed
  • Olive oil spray
  • ¼ Cup Tony Ferguson Fibre
  • 3 Tablespoons mixed dried herbs e.g. oregano, parsley, rosemary, basil etc
  • Salt & pepper to taste
  • 1 Tablespoons olive oil
  • Olive oil spray

Method

  1. Rub the chicken fillets with the crushed garlic then spray each side lightly with olive oil spray.
  2. Combine the fibre, herbs, salt and pepper to make a crumbing mix. Place the crumbing mix in a flat plate then coat each side of the chicken fillets.
  3. Heat the olive oil in a non stick-fry pan on medium heat. Add the chicken fillets to the pan and fry until golden on each side.
  4. Serve with a side salad or Vegetable side dish.
