Crumbed Garlic & Herb Chicken
(Serves 2)
Ingredients
- 2 x 120g Chicken breast fillets (females) OR 2 x 220g (males)
- 4 Cloves of garlic, crushed
- Olive oil spray
- ¼ Cup Tony Ferguson Fibre
- 3 Tablespoons mixed dried herbs e.g. oregano, parsley, rosemary, basil etc
- Salt & pepper to taste
- 1 Tablespoons olive oil
- Olive oil spray
Method
- Rub the chicken fillets with the crushed garlic then spray each side lightly with olive oil spray.
- Combine the fibre, herbs, salt and pepper to make a crumbing mix. Place the crumbing mix in a flat plate then coat each side of the chicken fillets.
- Heat the olive oil in a non stick-fry pan on medium heat. Add the chicken fillets to the pan and fry until golden on each side.
- Serve with a side salad or Vegetable side dish.
