Creamy Beef Stroganoff

(Serves 2)

Ingredients

  • Lean rump steak: 2 x 120g (females) or 2 x 220g (males)
  • 1 Leek or 1 large onion, finely sliced
  • ½ Zucchini, sliced into semi circles
  • 1 Garlic clove, crushed
  • ½ bell pepper, thinly sliced
  • 1 Tablespoon olive oil
  • 8 Medium mushrooms, sliced
  • 4 Tablespoons low fat ricotta cheese (or low fat quark) 
  • ¾ Cup salt reduced beef stock
  • Salt and pepper to season

Method

  1. Heat the oil in a fry pan on medium heat then add the beef, leek, zucchini and garlic. Toast for a few minutes then add the remaining vegetables and toast until golden.
  2. Place the stock and ricotta in a blender and process until combined.
  3. Add the stock mix to the steak and remaining vegetables, combine well and lower the heat to low. Simmer until the stock mix reduces to a thick and creamy sauce, then taste and season if necessary.
  4. Serve on a bed of Cauliflower rice or Notatoes.
