Poached Meringues with Berry Puree

Ingredients

  • 3 Egg whites
  • 2 Tablespoons powdered sweetener
  • 300g Fresh or frozen (thawed) berries, plus extra to serve (optional)
  • ¼ Cup water

Method

  1. To make the sauce, cook the berries with ¼ cup of water for
    5 minutes then puree and sieve. Add a little sweetener if desired.
  2. Whisk the egg whites until soft peaks form. Whisk in the
    sweetener a teaspoon at a time whisking until thick and glossy.
  3. Half fill a frying pan with water and bring to a simmer. Shape
    tablespoons of meringue into ovals with two spoons and add to
    the water.
  4. Cook in batches for 3 minutes then lift out and drain
    well.
  5. Serve the meringues with the sauce and extra berries if using.
