Cauliflower & Ricotta Bake
(Serves 2)
Ingredients
- ½ Medium head of cauliflower
- Low fat ricotta cheese – 300g (females) OR 400g (males)
- 1 Small onion, finely chopped
- 2 Stalks shallots/spring onions, finely chopped
- 4 Cloves garlic, finely crushed
- Salt and pepper to taste
Method
- Break cauliflower into florets, steam until just tender.
- While cauliflower is steaming, mix the ricotta, onion, shallots/spring onions and garlic together in a bowl.
- Once cauliflower is tender, add to the ricotta mix, gently combine and add salt and pepper to taste.
- Transfer cauliflower and cheese mix into a loaf tin.
- Bake in pre-heated (180°C) oven until just golden in colour.
- Serve creamy cauliflower bake with a salad or Vegetable Side Dish.

- Recipe serves 2 providing one protein serve each.
