Cauliflower & Ricotta Bake

(Serves 2)

Ingredients

  • ½ Medium head of cauliflower
  • Low fat ricotta cheese – 300g (females) OR 400g (males)
  • 1 Small onion, finely chopped
  • 2 Stalks shallots/spring onions, finely chopped
  • 4 Cloves garlic, finely crushed
  • Salt and pepper to taste

Method

  1. Break cauliflower into florets, steam until just tender.
  2. While cauliflower is steaming, mix the ricotta, onion, shallots/spring onions and garlic together in a bowl.
  3. Once cauliflower is tender, add to the ricotta mix, gently combine and add salt and pepper to taste.
  4. Transfer cauliflower and cheese mix into a loaf tin.
  5. Bake in pre-heated (180°C) oven until just golden in colour.
  6. Serve creamy cauliflower bake with a salad or Vegetable Side Dish.

  • Recipe serves 2 providing one protein serve each.
