Curried Sausages
(Serves 4)
Ingredients
Lean beef sausages: 2 sausages (females) OR 3 sausages (males)
1 Large brown onion, finely chopped
1 Cup of mushrooms, sliced
½ Bag mixed frozen vegetables (carrots, green beans, broccoli and cauliflower)
1 Tablespoon parsley flakes
1 Teaspoon oregano leaves
2 Cups made up stock using reduced salt chicken stock
1 Tablespoon olive oil
Curry sauce
1 Teaspoon curry powder (your choice of strength)
1 Clove of garlic, crushed
1 Teaspoon of mustard powder
½ Teaspoon ginger, crushed
3 Tablespoons of low fat ricotta cheese
Method
Place a medium fry pan on high heat and add the oil.
Cook sausages until golden, then cut into 1-2cm round pieces.
Add sausages to a wok with chicken stock, onion, garlic, ginger, mushrooms, herbs and mixed vegetables.
Cook for 20 minutes covered, stirring every 5 minutes.
While the sausage and vegetables are cooking, combine all curry sauce ingredients, then add curry sauce to the mixture and combine well. (You may want to add a little more mustard powder or curry powder, depending on your taste)
Reduce heat and simmer for a further 15-20 minutes uncovered to allow some of the sauce to thicken, stirring every 5 minutes.
Serve immediately.
